You remember Bob Ross, right? The dulcet-toned television superstar who taught the world how to paint “happy little trees?” Basically invented ASMR? I love that guy.

There he’ll be, in his tiny quiet studio, afro billowing in the air-conditioned breeze as he lightly dab-dab-dabs paint onto a canvas.

“Let’s just put a little cabin right here,” he’ll whisper as he uses a putty knife to heap a glob of brown paint among the greens and blues. It looks like nothing.

But then, he takes the edge of that knife and pushes the paint around, and slowly but surely, the image takes shape. Before the episode wraps, there that cabin will be, nestled among towering firs, a range of mountains in the distance.

It’s incredible. Pure magic.

Food, to me, is a bit like that. Because I have so little innate understanding of how flavors work together, I’m often taken by complete surprise when a recipe transforms from a list of ingredients into a delicious dish.

That was certainly the case with the following recipe for okra-and-corn maque choux. On paper, there doesn’t seem to be anything that would bind the flavors of this conglomerate of vegetables. Heck, even that great harbinger of deliciousness, salt, is listed as little more of an afterthought.

And yet, one forkful of this veggie-based dish silenced all doubts. Cooking the pile of vegetables with the lone meat — a sausage of your choice (I had some andouille sitting around, so I used that) — infused the former with the latter, giving the entire potful a spicy, smoky flavor. To me, it’s culinary wizardry at its most Rossian.

OKRA-AND-CORN MAQUE CHOUX

1/4 pound spicy smoked sausage, diced

1/2 cup chopped sweet onion

1/2 cup chopped green bell pepper

2 garlic cloves, minced

3 cups fresh corn kernels (I cheated and used frozen. Shh.)

1 cup sliced fresh okra (Again … frozen. Shh.)

1 cup peeled, seeded and diced tomato (about 1/2 pound)

Salt and pepper to taste

Saute sausage in a large skillet (I used my trusty cast iron) over a medium-high heat for 3 minutes or until browned. Add onion, bell pepper and garlic. Saute for 5 minutes or until tender.

Add corn, okra and tomato. Cook, stirring often, for 10 minutes. Season with salt and pepper to taste. Eat it.
